Winemaking process:Traditional method destemmed grapes.
Grape varieties: 80% Viura 20% Malvasia Harvesting: Manual in tubs, with a selection at the sorting table.
Ageing: Malolactic fermentation in the barrel.
Type of cask: 100% French.
Produced from grapes Viura and Malvasia from our oldest vineyards located in Baños de Ebro (Rioja Alavesa).
Of these clusters draw the free run wine without prior pressing, extracted by bleeding, and by its own weight to a small deposit of 5000 liters, in which conducts the fermentation controlled temperature of 15ºC.
